Roasted Rack of Lamb

This rack of lamb is easy to make and tastes really good. 

One thing: if you do not like the meat to be too rare, it is best increase the oven time to 16 minutes.

Ingredients:

1/2 cup fresh bread crumbs (we ready made Panko)
2 tablespoons minced garlic 
2 tablespoons chopped fresh rosemary 
1 teaspoon salt 
1/4 teaspoon black pepper 
2 tablespoons olive oil 
1 (7 bone) rack of lamb, trimmed and frenched 
1 teaspoon salt 
1 teaspoon black pepper 
2 tablespoons olive oil 
1 tablespoon Dijon mustard (used a dinner spoon for a thick coating)

How to do it:

Step 1:
Preheat the oven to 230 C. 

Step 2:
Combine bread crumbs, garlic, rosemary, salt and pepper and mix with some olive oil until it is all a bit moist.

Step 3: 
Season the rack with salt and pepper and fry in the oil, let is cool and brush with musterd and then coat with the mix from step 2.

Step 4: 
Wrap the bones with tin foil and put it in the oven for 14 (or 16 or longer if you want it more done), 

Step 5: 
Take it out, cover with tin foil and let it rest. Cut along the bone and serve
